It can be set up to whatever people want it to be or require it for. Curtin University's location right next door provides the Centre with a focussed catchment of over 45,000 staff and students on top of the already densely populated residential surrounds. The main fitout was finished on time, even with the tight schedule being cut by two weeks. We use a wood fire and are completely about the quality of produce. It was decadently creamy and full of flavour. That touches on another trend I think we will see more emphasis on in the industry — consistency. This is the dish to get if you like your meals big and red-meat based.
Bit different compared to the multi-jug sessions of the old waterford. In terms of niches in the market we believe this venue offers and allows a lot of sport to be enjoyed by the sports fan. So simple yet so good. The chips here are incredible. We want them to put their name to something, to take pride in it. Termites and spiders and mice, oh my! The selection of food ranges for us all. They comes with a side of garlic aioli dipping sauce.
Its light, easy to drink, you can have it with red or white meat, even seafood it mixes in nicely with. The idea was conceptual to us just over two years ago when we were approached by the owners of Waterford Plaza. We find we get more out of our staff with this philosophy however the customer gets the most out of it as they get to sample something new. The service is wonderful and its lovely how you can come in for a lovely meal or just a drink. Having recently completed a stunning development, the Centre is now firmly established as the district shopping centre for the City of South Perth.
In terms of cocktails we have hired a couple of great guys who have been involved with places like Botanica and Rockpool and we have given them free reign to do what they do best behind the bar; get creative with cocktails. Dinner indulgers treat tongues to a Malva pudding each for dessert, along with a beer or glass of wine to keep mouths from desert-like dehydration. It is a little bit more leveled out. It incorporates game meats so things like Venison, Buffalo and Ostrich. That extends to the deck up top. This is congruent with our African theme. Using strong, natural textures and colours with cedar weatherboards, sandstone cladding, a solid recycled timber bar top and rustic metal lighting, an environment was created that reflected the masculinity of an old-school butchers workshop.
